Holt,是城市裡的一座靜謐山丘,以創造樸質、純粹的美味料理為初衷,希冀帶領人們沈浸於一段滋味曼妙的旅程,如同被環山蒼鬱給擁抱著。
Holt stands as a serene hill within the city, conceived with the intention of crafting dishes that embody rustic and pure delight. Its mission is to guide its patrons on a flavorful journey that feels as though one is embraced by the verdant hills surrounding them.
適逢 Holt 成立三週年,團隊為提供更細緻的用餐體驗決定改裝。我們依循這三年的使用經驗,以承舊啟新與延續珍貴的品牌精神為出發點,並致力「讓客人專注於自己與親友、與料理之間的時光」,為 Holt 重塑庭院與用餐空間。
Marking its third anniversary, Holt decided to renovate to enhance the dining experience. Drawing from three years of operational insights, the renovation was grounded in both honoring the past and pioneering the future, while preserving the cherished essence of the brand. The focus was to create an environment where guests could immerse themselves in the moments shared with loved ones and the culinary delights, thus redesigning both the courtyard and dining area of Holt.
藉由基地原始的高低起伏、踏階的指引,猶如漫步於山林,這條小徑同時溫柔地隔絕了巷弄的熙攘。緩步進入餐廳,四周花草樹木搖曳生姿,一棵茂盛的樹葡萄像張開雙臂般地迎接來客,與頂上的菩提樹一同颯颯歌唱。
踏入室內,腳下的地毯如同土壤般鬆軟厚實,將步伐聲變得柔和。於開放式的用餐環境中,透過牆面素樸的原始塗料、木頭勾勒的天花結構、柔軟布料搭建的天棚與訂製吊燈,營造出自然原始、恬靜雅緻的氛圍,亦保有舒適自在的社交品質。而連結內外的一扇窗景,由外向內窺探、由內向外欣賞皆饒富趣味,隨四季的流轉,時刻展演不同的景致。

主廚 Jeffery 對於料理的簡約信念,扶持著人們細味人生,簡單是最不容易的追尋,是為褪去各式各樣的繁瑣,一次又一次堅定地端出雋永的料理。
The approach to the restaurant, with its natural undulations and stepped pathways, is reminiscent of a walk through the woods, gently separating the bustle of the alleyways. As guests slowly make their way in, they are greeted by the sway of flowers and trees, with a lush grape tree extending its arms in welcome, harmoniously accompanied by the rustling of a Bodhi tree above.
Stepping inside, the carpet underfoot mimics the soft, thick soil, softening every step. The open dining space is crafted with simplicity and elegance, featuring walls adorned with basic paint, ceilings outlined with wood, canopies of soft fabric, and custom-made chandeliers, all contributing to an ambiance that is both natural and tranquil, yet socially inviting. The windows connect the interior with the exterior, offering intriguing views both from the inside out and outside in, which change with the seasons to display various landscapes.

Chef Jeffery's minimalist philosophy on cuisine supports a refined taste of life, where simplicity is the most challenging pursuit. It's about stripping away the unnecessary, to consistently present dishes that are profound in their simplicity.
